Banana & Blueberry Goji Ice Cream

Here is an easy recipe to make ahead for the weekend. Goji berries have been used in Chinese medicine for over 2,000 years. Goji berries are rich in vitamins and minerals, including vitamin C, beta-carotene, iron, and selenium. They are also a good source of protein and fiber.

Goji berries have many health benefits, including boosting the immune system, improving circulation, and helping to protect the liver. Goji berries can be eaten fresh or dried and are often added to teas, juices, and smoothies. Making ice cream is a fun way to eat Goji berries and get your kids to eat them.

Blend Goji berries with pitted dates, cinnamon, blueberries, and a frozen banana. Blend and freeze for 4-5 hrs for soft serve and 6 hrs for firmer ice cream. Enjoy!
